American Fresh Brewhouse
Created the design and managed construction for a full-service restaurant and brewery situated in an urban lifestyle shopping center. Notable features include a 22-foot bi-fold hanger door opening to the front patio, requiring significant additional structural steel and glazed with curtain wall glass panels. The 3,600 sq. ft. space accommodates 120 patron seats, a 120 sq. ft. brewer space, a full kitchen, storage area, and office.
The project began with a cold dark shell from Federal Realty, encompassing base building coordination, underfloor work, utility connections, exterior walls and storefront system construction, and installation of a 300 sq. ft. mezzanine. Operational requirements were met, including a 6-story kitchen ventilation shaft, and the installation of plumbing, electrical, and mechanical systems.

Restaurant Trends to Watch
In the post-Covid era, customer expectations include outdoor dining areas, now a crucial aspect of restaurant ambiance. The seamless transition from indoor to outdoor spaces presents a distinct design opportunity. Thoughtful consideration of weather protection and seamless patio integration into the overall operation is essential.
Design spaces that transport customers away from the daily grind. Incorporate lush greenery, serene gardens, and thoughtful lighting. Prioritize layouts that enhance guest conversations, defining a floor plan that invites relaxation and a break from the everyday.
Transparency and authenticity in dining are elevated when guests catch a glimpse of their food preparation. While this has been a standard for chef-owner restaurants, showcasing a portion of the cooking process significantly influences how restaurant design integrates with the overall guest experience.
